One of the world’s most recognized and widespread grape varieties and wines is the Cabernet Sauvignon. The grape originates in France from the Gironde region. Cabernet Sauvignon is the product of spontaneous field crosses of Cabernet Franc and Sauvignon Blanc in nature.
Major features of the wine are the deep color, medium or high alcohol and acidic content in addition to high tannin substance. Dark small fruits, primarily blackberries, black currants and liquorice present the well-known notes of this full-bodied red wine. Merlot can always be found in the region of Cabernet Sauvignon that is no wonder as both are offsprings of the same vine grapes. Merlot, the half sibling’s parent varieties are Cabernet Franc and Magdeleine Noire des Charentes.
Merlot is the second most widespread grape and wine variety in the world.
Merlot features a wonderful deep color, high alcohol content, medium acids and tannins. Ripe fruitiness and jamminess from plums, blackberries and cranberries make a perfect blend with floral aromas, fine spiciness and juiciness.
Smooth silky texture and a strong tannin structure make this wine stand out as it tames the “wildness” of Cabernet Sauvignon through introducing more roundness into the wine. Blending Cabernet Sauvignon and Merlot produced SYMBOL, a perfect Bordeaux cuvée wine.
Our vineyard is engaged in chemical-free viniculture and organic wine production, including crop control, manual harvesting and grape sorting as well as very gentle grape processing.Ageing is performed in new and second fill 225 litre oak barrels – separated by types – on fine lees (sur lie) with continuous stirring (battonage) over a period of 18 months. It is very important to note that throughout the whole winemaking process we only use animal derived component free ingredients (vegan). Blending proportions are determined by tasting prior to bottling.
The wine has a striking ruby red color and intense aromas, dominantly coming from black currants, blackberries and chocolate. There is a distinctly harmonious balance of spicy and wild berry aromas with a subtle aftertaste of vanilla. It is a full-bodied, well-balanced wine, featuring wonderful acids, elevated structure and a long sip.
Symbol is a modern, elegant wine with long ageing potential and a charmingly silky, rounded tannin structure.
Winemaker’s suggestion:
Drink this wine from a tulip shaped red wine glass with a fairly big bell at a temperature of 16-18 C.
Cuvée wine pairings run the gamut. Symbol would perfectly pair with game – for example deer, boar and mouflon – in addition to pork, hard mature cheeses, organ meats as well as potatoes, beets and tomatoes, just to mention a few root vegetables.
